Honey Soy Pork Chops with Watermelon Feta Salad
Serves 4
Ingredients:
8 Center cut pork chops
½ Cup honey
¼ Cup soy sauce
½ Teaspoon pepper flakes
Directions:
Combine the honey, soy and pepper flakes in a bowl and mix well. Add this mixture to the pork chops in a zippy bag and refrigerate for at least 30 minutes (or overnight).
Remove the chops from the bag and discard the marinade. Grill the chops for 2 minutes per side over a hot grill. Move the chops to a medium heat section of the grill and continue to cook (turning often) until just done.
Watermelon Feta Salad
4 Cup diced watermelon
1 Teaspoon jalapeño pepper, seeded and diced small
1 Tablespoon white wine vinegar
½ Tablespoon squeeze basil
¼ Cup olive oil
Pinch of salt
Fresh cracked pepper
¾ Cup feta cheese
Directions:
Placed the diced watermelon and pepper in a large bowl.
To make the dressing, place the vinegar, basil and oil in a separate bowl and whisk to incorporate.
Add the dressing, salt and pepper and feta to the watermelon and toss to coat. Srve immediately or refrigerate for up to 4 hours.
