Ingredients:
1 16oz Southern Foods at Home Pork Tenderloin
1 Southern Foods at Home Diced Onion Pack
1 Southern Foods at Home Diced Green Pepper
2 Southern Foods at Home Collard Greens
2 Southern Foods at Home Black Eyed Peas
1 Package Newskies Bacon
2 Cups Chicken Broth
2 TBSP Apple Cider Vinegar
¼ Cup Olive Oil
2 TBSP and 1 tsp Minced Garlic
2 TBSP Salt & Pepper
1/2 tsp Chillie Flakes
1 TBSP Cajun Seasoning
1 TBSP Granulated Sugar
Preparation
1.) Thaw ground pork tenderloin, bacon and veggie packs in warm water for 5- 10 minutes.
2.) Preheat oven to 375°.
3.) Mix 1 tablespoon Cajun Seasoning with 1 tablespoon granulated sugar for tenderloin seasoning; sprinkle seasoning all over pork tenderloin.
4.) Pour olive oil in a pan over medium heat; pan sear each side of the pork tenderloin for 5-10 minutes.
5.) Bake pork tenderloin for 10-15 minutes.
6.) Cook 5 pieces of bacon thoroughly; separate and save 3 tablespoons of bacon grease for collard greens.
7.) In the same pan add ½ cup of diced green peppers and 1 cup of diced onions, sauté for 2-3 minutes then add 2 tablespoons minced garlic.
8.) Gradually pour 2 ½ cups chicken broth, stirring constantly before adding in 2 cups of black eyed peas.
9.) Mix in 1 tablespoon of salt and pepper and bring to a low boil before crumbling in 2 ½ pieces of cooked back.
10.) Cover and simmer for 30-45 minutes on low heat.
11.) Pour 3 tablespoons of bacon grease into a pan on medium heat then mix in the ½ teaspoon of chillie flakes and 1 teaspoon of minced garlic.
12.) Add collard greens and sauté 2-3 minutes before adding in 1 tablespoon of Salt & Pepper.
13.) Mix in 2 tablespoons apple cider vinegar; stir into mixture thoroughly before crumbling the remaining 2 ½ pieces of bacon.
14.) Steam for 5-7 minutes on low heat.
*Sprinkle a little parsley on top for added flavouring.
